Being that it is such a cold, rainy day in the midwest today, I figured what better day to post an ice cream recipe!?! Afterall, everyday is a good day for Paleo ice cream! Before I started following the Paleo lifestyle, ice cream was a special treat reserved for the rare indulgence. In contrast, this recipe uses real food ingredients and no added sugars and it is one of my quick and very easy, go-to snacks that I usually prepare daily. I've experimented with many different types of frozen fruits and I've found that bananas work best to create an ice cream texture. To freeze a banana for use in the ice cream, peel it, cut it in half, and then store it in the freezer until ready for use. Ingredients:
1 frozen medium or large banana
3/4 cup canned coconut milk (ensure that the ingredients contain coconut only or make homemade coconut milk)
Optional topping:
Blueberries, raspberries, or nuts
Directions:
1.) Place frozen banana and coconut milk in blender and blend together. If using a smaller banana, adjust the amount of coconut milk accordingly.
2.) Add optional toppings if desired.
And that's it! This is ridiculously easy, but so yummy! I hope you enjoy it!
