Book Review: "The Autoimmune Paleo Cookbook"...and a Giveaway!

I recently had the opportunity to review "The Autoimmune Paleo Cookbook" by Mickey Trescott, a personal chef and Nutritional Therapy Practitioner.  I've been following Mickey's blog since I first learned about the Paleo Autoimmune Protocol (AIP) and I've thoroughly enjoyed all of her recipes that I've tried.  When I first started the Paleo AIP, it was a bit overwhelming to find recipes that adhered to the guidelines, but the recipes featured on Mickey's blog made it a lot easier.  It certainly didn't hurt that they all tasted fantastic too!  As Mickey has dealt with the challenge of facing two autoimmune disorders herself, she has first-hand experience in following the AIP and she understands exactly what ingredients are safe and which are not permitted.  And she is a professional chef, so she knows how to make AIP taste good!  So, as you may imagine, I was extremely excited to be able to dive into the first and only cookbook that is 100% dedicated to the Paleo AIP!

The cookbook is an e-book, which makes it easy to download to your computer or tablet within a matter of seconds.  I really enjoy the e-book format because the recipes are nicely organized and every section and recipe is hyperlinked, which allows you to quickly find that for which you are looking.  The cookbook is also photographed in a beautiful and artistic manner!  The layout of the cookbook is simple, clean, and professional.  It begins with a description of the Paleo AIP, including a breakdown of which foods are permitted and which should be avoided.  It includes a shopping guide, tips for batch cooking (because who doesn't want to save time?!), and general ideas on what to do for breakfast.  As anyone who has ever followed the AIP knows, breakfast is usually the most challenging meal of the day, at least at first.

One of the things that I found most helpful about "The Autoimmune Paleo Cookbook" is that it includes two 4-Week meal plans and shopping guides.  If you are new to the AIP, this is sure to take a huge burden off your shoulders.  Mickey has already done all of the planning for you, so there are no excuses not to try the AIP!  If you have been following the AIP for a while, the meal plans will add some new variety into your life and it will still be nice to have the planning taken care of for you!

"The Autoimmune Paleo Cookbook" contains 110 recipes, including appetizers, beverages, dressings and sauces, salads, soups, vegetables, chicken, seafood, beef and lamb, and desserts.  Wow!  That is a lot of AIP recipes!  And each and every one of them is nourishing and healing for someone with autoimmune disease.  Not to mention, delicious, whether you have autoimmune disease or not.

I've been trying several of the recipes in "The Autoimmune Paleo Cookbook" and it would be hard to pick an overall favorite.  But it is summertime in the Midwest, and I've definitely been enjoying the Mediterranean Salmon Salad, which is refreshing and bright.  I added in some Olive-Avocado Dressing on top, which is optional, but I highly recommend it.
